Ingredients
500 gm hung curd
100 gm brown onion paste
50 gm kaju paste
50 gm amul cream
100 gm coriander paste
50 gm mint paste
10/15 green chillies paste (depends on your spice level)
30 gm ginger garlic paste
8 no chicken thigh piece
Salt to taste
2tbsp coriander powder
1 tbsp cumin powder
30 + 10 gm asli ghee
Onion rings, lemon wedges, mint leaves
Coal for dhungar
Preparation
Prepare a marination by combining all the ingredients together.
With the help of your palm cream everything together until the marinade is smooth and aerated.
Add chicken thighs and coat them well and set aside in the fridge for 3 hours or overnight if you have the bandwidth.
Smoke it with coal and rest until it comes to room temp.
Cool on a hot grill pan, until well cooked and tender.
Serve hot with sweet paprika yogurt.
