Be very gentle while flipping the pancake to make sure you don't deflate it.
Ingredients
½ cup refine flour
¼ cup castor sugar
1 large egg
Vanilla essence
½ tsp baking powder
2 tbsp milk
1 tbsp oil
Butter to grease
½ cup strawberry chopped
½ tsp lemon juice
Preparation
Whisk eggs and ⅛ cup sugar until pale and fluffy, add essence and whisk until stiff peaks.
Sieve refine flour and baking powder in the eggs.
Add milk, oil and lightly fold until well combined.
In a saucepan add chop strawberries, lemon juice and remaining sugar. Cook on low heat until it forms a jam like consistency.
Heat a non stick pan and grease it with butter lightly. Throw a dollop of the batter and let it sit on low- medium flame until air pockets start to appear.
Once the base has turned light brown flip it over and cook on the other side.
Serve hot with strawberry compote.
