Tips
Various combinations of mushrooms can be mixed.
Ghost cheese or cheddar can be added.
If you are not a very big fan of potatoes with mushrooms you can replace it with panada (flour batter).
Drying out all the water from the mushroom is very important, to avoid the croquettes from bursting while frying them.
Ingredients
500 gms mixed mushroom
3 green chillies chop
Coriander chop
Salt
1 tbsp cornflour
2 slices bread
Pinch of pepper powder
1 tsp dried thyme
¼ tsp rosemary dried
2 big boiled potatoes
1 medium sized onion chopped
Oil for frying
Bread crumbs for coating
1 tbsp chop garlic
1 tbsp butter
Preparation
In a pan heat butter with garlic, add sliced mushrooms and cook until it's completely dry, add salt and cook well.
Once cooked and completely dry add thyme, rosemary, onion, green chilli and chopped coriander, mix well.
Once cooled completely add mashed potatoes and bread.
Combine it all well until it all comes together.
Make a paste with cornflour and water.
Divide the mixture in equal portions, and make balls with it.
Dip the ball in the cornflour paste and then crumb.
Repeat it on all the portions and chill.
Deep fry till it's nice golden brown.
Serve hot.
